Fiery Chicken + Waffles

INGREDIENTS

FOR THE WINGS

12 Chicken Wings

3 C. Coconut Milk

4 Tsp. Salt

1 Tsp. Black Pepper

2 C. All-Purpose Gluten-Free Flour

1 C. Cornstarch

1 Tbsp. Onion Powder

1 Tbsp. Garlic Powder

1 Tbsp. Paprika

4 C. Vegetable Oil

1 Tbsp. Oregano

1 Tbsp. Basil

PREPARATION

3 HOURS / 4 SERVINGS

  1. Mix together chicken wings, coconut milk, 2 tsp. salt, and pepper into a large bowl. Cover with plastic wrap, and refrigerate for 2 hours.
  2. After chicken marinates, combine the flour, cornstarch, onion powder, garlic powder, 2 tsp. salt, paprika, oregano, and basil in a sealable plastic bag. Place the marinated chicken in a bag, one at a time, and shake to combine the ingredients.
  3. Heat vegetable oil in a pot on medium heat until it registers 350˚F. Place 3–4 prepared wings in the oil for 15–18 minutes, turning each piece every 2 minutes. Cook until golden brown or internal temperateure registers 165˚F. Place on a paper towel lined cooling rack for 10 minutes to rest.
  4. Top with Blue Agave Sriracha for an added punch!

3 C. All-Purpose Gluten-Free Flour

1 C. Cornmeal, Medium Grind

2 Tbsp. Baking Powder

1 1/3 C. Sugar

1 Tsp. Salt

1 Jalapeño Pepper, Chopped

1/3 C. Vegetable Oil

2/3 C. Unsalted Butter, Melted

2 1/2 C. Coconut Milk

2 Tbsp. Blue Agave Nectar

4 Eggs, Beaten

2 Tbsp. Blue Agave Sriracha

FOR THE SYRUP

1/4 C. Blue Agave Sriracha

1 C. Maple Syrup

Yellowbird Blue Agave Sriracha

PREPARATION

25 MINUTES / 10 SERVINGS

  1. Preheat waffle iron at medium temperature.
  2. For Sriracha Maple Syrup, mix maple syrup and Yellowbird Blue Agave Sriracha and set aside.
  3. In a large mixing bowl, stir the cornmeal, all-purpose gluten-free flour, sugar, baking powder, salt and finely chopped jalapeño pepper.
  4. Pour in the vegetable oil, melted butter, coconut milk, Yellowbird Blue Agave Sriracha, blue agave nectar, and beaten eggs, and stir just until moistened.
  5. Spray waffle iron with cooking spray if recommended, pour onto waffle iron and cook until tops or edges begin to darken.
  6. Serve with Fiery Fried Chicken and pre-made Sriracha Maple Syrup. Enjoy!
