A spicy cornbread waffle topped with blueberries and maple syrup feels like walking on sunshine. This sweet and savory combo will melt your lips and your heart.
Ingredients
FOR THE WAFFLES
- 1 1/2 C. All-Purpose Flour
- 1 C. Cornmeal, Medium Grind
- 2 Tbsp. Sugar
- 2 Tsp. Baking Powder
- 2 Tsp. Baking Soda
- 1 Tsp. Salt
- 2 C. Whole Milk
- 6 Tbsp. Butter, Melted
- 2 Eggs
- 2 C. Cheddar Cheese, shredded
- 1/2 C. Yellowbird Habanero Condiment
FOR THE TOPPING
- 1/4 C. Fresh Blueberries
- 1 C. Maple Syrup
Preparation
FOR THE WAFFLES
- Preheat waffle iron at medium temperature.
- Whisk together the dry ingredients.
- In a smaller bowl, whisk together the milk, eggs, and Yellowbird Habanero Condiment.
- Add the wet ingredients to the dry, folding together until just combined. Don’t overmix. The batter should be shaggy versus smooth.
- Add in the melted butter and cheese, folding together gently.
- Grease the waffle maker, then add about 3/4 cup of batter for large waffles.
- Top with fresh blueberries and maple syrup or honey of your choice. We like Treehive—it has both ;)
