Yellowbird Habanero Butter Fried Onion Rings


Spicy onions and habanero sauce are tamed when paired with creamy, rich fat. Of course, we won't judge if you want to dunk them in more spice.

 

Ingredients

FOR THE ONION RINGS

  • 1 C. buttermilk
  • 1/2 C. Habanero Condiment
  • 1 C. all-purpose flour
  • 1 Tsp. Kosher salt
  • 1 Tsp. freshly ground pepper
  • 1 large red onion, sliced into ¼-inch-thick rings
  • 8 tablespoons (1 stick) unsalted butter

Preparation

FOR THE ONION RINGS

  1. Place buttermilk in a medium bowl. Place flour in a separate medium bowl and stir in salt and pepper.

  2. Working in batches, toss onion rings in flour and shake off excess. Dip rings in buttermilk allowing excess to drip back into the bowl. Return to flour and toss to coat again. Shake off excess.

  3. Heat 4 Tbsp. butter in a large skillet over medium, stirring occasionally, until lightly browned and foaming. Add about half of onion rings and cook, turning once, until golden brown and crisp—about 8–10 minutes.

  4. Transfer to paper towels with tongs; season with salt and pepper. Repeat with remaining butter and onion.
