Jalapeño Goat Cheese Pizza

INGREDIENTS

FOR THE DOUGH

1 Tbsp. Olive Oil

3 C. Gluten Free Flour

1 Tsp. Salt

1 Tbsp. Yeast

1/2 Tsp. Baking Powder

3 Tbsp. Sugar

1 1/4 C. Warm Water, Divided

1 Tbsp. Nutritional Yeast

PREPARATION

  1. Preheat oven to 350˚F. In a small bowl, combine yeast and 3/4 cup warm water (about 110˚F). Too hot and it will kill the yeast! Let set for 5 minutes to activate. Sprinkle in 1 Tbsp. of the sugar a few minutes in.
  2. In a separate bowl, combine gluten free flour blend, salt, baking powder and remaining 2 Tbsp. sugar. Whisk until well combined. Make a well in the dry mixture and add the yeast mixture. Add the olive oil and additional 1/2 cup warm water before stirring. Then stir it all together until well combined.
  3. Lightly coat a clean surface with rice flour and knead the dough. Work from the middle and push to spread and flatten the dough. Use a rolling pin to form into a circle. You want it to be pretty thin — less than 1/4 inch. Place on round pizza pan. Put the crust in the oven to pre-bake for roughly 15–20 minutes, or until it begins to look dry. Cracks may appear, but that's normal. Remove from oven.

1 Unit of Pizza Dough

1/4 C. Jalapeño Pizza Sauce

8 Oz. Goat Cheese

2 C. Cauliflower, Thinly Chopped

1 C. Spinach

1/4 Tsp. Basil

1/4 Tsp. Oregano

1/4 Tsp. Fennel

FOR THE PIZZA SAUCE

1 1/2 C. Jalapeño Condiment

1 Tsp. Coconut Oil, Coat The Pan

2 Tomatoes, Diced

1 C. Onions, Diced

Yellowbird Jalapeño Condiment

PREPARATION

17 MINUTES / 4 SERVINGS

  1. Preheat oven to 500˚F.
  2. Place pre-made pizza dough, or make your own, onto pizza stone or baking sheet and set aside.
  3. Place a medium sized frying pan over medium heat and coat pan with olive oil. Add chopped cauliflower to pan and sauté until edges begin to brown. Add spinach and sauté for one more minute. Set aside.
  4. Spread Yellowbird Jalapeño Condiment evenly onto the pizza crust. Sprinkle basil, oregano, fennel, and goat cheese evenly over sauce. Top with cauliflower and spinach.
  5. Place in oven for 7 minutes or until cheese begins to bubble and crust turns golden brown. Remove from oven and allow to cool for 3 minutes.
