Fluffy, cheesy, eggy deliciousness meets bright cherry tomatoes and Yellowbird Habanero Condiment in this quick and easy quiche.
Ingredients
FOR THE DISH
- 4 Eggs
- 1/4 C. Feta Cheese, Crumbled
- 1/3 C. Whole Milk
- 1/4 Tsp. Salt
- 1/2 C. Onion, Diced
- 1/2 C. Portobello Mushroom, Sliced
- 1 C. Kale, Chopped
- 1 C. Cherry Tomato, Halved
- 1/4 C. Habanero Condiment
Preparation
FOR THE DISH
- Preheat oven to 360˚F.
- Place an 8-inch cornering-ware or cast iron skillet on the stove over medium heat. Coat with EVOO and add prepared onions, mushrooms, and kale. Sauté until kale is crispy — about 10 minutes. Remove from heat.
- In a medium-sized mixing bowl, beat eggs, milk, Yellowbird Habanero Condiment, and salt until well blended. Pour into skillet with sautéed veggies.
- Top with halved tomatoes and feta cheese and place in oven for 15–17 minutes. Allow to cool slightly then serve. Top with more Yellowbird as desired.
